Ingredients
For the Cake:
- 200g all-purpose flour
- 200g granulated sugar
- 75g unsweetened cocoa powder
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs
- 240ml whole milk
- 120ml vegetable oil
- 2 tablespoon vanilla extract
- 2 cannabis oil (adjust based in desired potency)
- 240ml boiling water
For the Chocolate Icing:
- 150g unsalted butter, softened
- 400g icing sugar
- 60g unsweetened cocoa powder
- 80ml whole milk
- 2 teaspoons vanilla extract
Instructions
For the Cake:
1. Preheat the Oven: Preheat your oven to 180°C. Grease and flour two 20cm round cake pans.
2. Prepare dry Ingredients: In a Large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Combine Wet Ingredients: Add add the eggs, milk, vegetable oil, cannabis oil, and vanilla extract to the dry ingredients. Beat on medium speed foe 2 minutes until well combined.
4. Add Boiling Water: Stir in the boiling water. The batter will be thin – this is normal.
5. Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30 – 35 minutes or until a toothpick inserted into the center comes to clean.
6. Cool the Cake: Remove the cakes from the oven and let them cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
For the Chocolate Icing:
1. Beat the Butter: in a large bowl, beat the softened butter until creamy.
2. Add Sugar and Cocoa Powder: Gradually add the icing sugar and cocoa powder, beating on low speed until combined.
3. Add Milk and Vanilla: Add the milk and vanilla extract, then increase the speed to medium and beat until icing is smooth and fluffy.
Assembling the Cake:
1. Layer and Ice the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of chocolate icing on top.
2. Add the Second Layer: Place the second layer on top and spread the remaining icing evenly over the top and sides of the cake.
3. Decorate (Optional): For the finishing touches, decorate the cake with chocolate shavings or sprinkles, if desired.
4. Set the Icing: Let the cake sit for at least 30 minutes before slicing to allow the icing to set.
