Ingredients:
- 2 cans (340g each) salt-free sweetcorn, drained
- 1 red onion, finely chopped
- 2 large tomatoes, deseeded and finely diced
- 15g fresh coriander, roughly chopped
- Juice of 2 limes
- 60ml extra virgin olive oil
- 1-2 teaspoons cannabis oil (adjust based on desired potency)
- 10ml clear honey
- Salt and freshly ground black pepper, to taste
Instructions:
1. Combine the Salad Ingredients:
- In a large bowl, mix the sweetcorn, red onion, tomatoes, and coriander.
2. Prepare the Dressing:
- In a small bowl, whisk together the lime juice, olive oil, cannabis oil, and honey until well combined.
3. Season and Mix:
- Season the dressing with salt and black pepper to taste, then pour it over the corn salad.
4. Toss and Serve:
- Toss the salad to coat all ingredients with the dressing evenly, then serve immediately.
