Chickpea Salad Sandwich with Cannabis Oil

Ingredients

  • 2 cans (438g each) no-salt-added chickpeas, rinsed
  • 90ml extra virgin oil
  • 1-2 teaspoons cannabis oil (adjust based on desired potency)
  • 45ml lemon juice
  • 10g Dijon mustard
  • 1,5g garlic powder
  • 60g finely chopped celery
  • 60g finely chopped celery
  • 15g finely chopped fresh dill
  • Pinch of salt
  • Pinch of ground pepper
  • 60g vegan mayonnaise
  • 8 slices whole-grain bread, toasted
  • 4 green lettuce leaves
  • 4 thin sliced red onion
  • 4 tomato slices

Instruction

1. Prepare the Chickpea Mixture:

  • In a large bowl, combine the chickpeas, olive oil, cannabis oil, lemon juice, mustard, and garlic powder. Using a fork or potato masher, crush the chickpeas until most are mashed, but leave some whole for texture.

2. Mix in Remaining Ingredients:

  • Stir in the celery, dill, salt, and pepper until well combined.

3. Assemble the Sandwiches

  • Spread 1 tablespoon of vegan mayonnaise on one side of each of 4 slices of bread. Top each with a lettuce leaf, red onion slice, tomato slice, and a generous portion of the chickpea mixture.

4. Finish and Serve

  • Place the remaining slices of bread on top to complete the sandwiches. Serve immediately.
