Chickpea-Tuna Salad with Cannabis Oil

Ingredients:

  • 440g chickpeas (garbanzo beans), drained and rinsed
  • 30ml red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon cannabis oil (adjust based on desired potency)
  • 2.5g kosher salt
  • 140g oil-packed tuna, drained
  • 70g chopped radicchio
  • 40g pitted kalamata olives, roughly chopped
  • 30g drained capers
  • 15g finely chopped red onion
  • Arugula or cooked farro, for serving

Instructions:

1. Prepare the Chickpea Base:

  • In a medium bowl, stir together the chickpeas, red wine vinegar, olive oil, cannabis oil, and salt.

2. Marinate:

  • Let the mixture stand, stirring occasionally, for about 20 minutes to allow the flavors to meld.
