Ingredients:
- 6 bone-in, skin-on chicken thighs
- Salt, to taste
- Pepper, to taste
- 45g unsalted butter, divided
- 4 cloves garlic, sliced
- 236ml chicken broth
- 118ml heavy cream
- 20g sun-dried tomatoes
- 5ml dried oregano
- 5ml dried thyme
- 10g fresh basil, sliced
- 1-2 teaspoons cannabis oil (adjust based on desired potency)
Preparation:
1. Season the Chicken:
- Season the chicken thighs with salt and pepper.
2. Sear the Chicken:
- Melt 30g of butter in a large oven-proof skillet over medium-high heat.
- Add the chicken, skin-side down, and sear both sides until golden brown. Remove the chicken and set aside, draining excess fat from the skillet.
3. Prepare the Sauce:
- In the same skillet, melt the remaining 15g of butter and add the garlic. Stir until fragrant.
- Add the chicken broth, heavy cream, sun-dried tomatoes, oregano, thyme, fresh basil, and cannabis oil. Stir well and reduce the heat to low.
4. Return Chicken to the Skillet:
- Return the seared chicken thighs to the skillet, basting them well with the sauce.
5. Bake:
- Transfer the skillet to a preheated oven at 200°C and bake for 25 minutes, or until the chicken is cooked through.
6. Serve:
- Serve the chicken immediately, drizzling the remaining sauce over each piece.
