Chocolate Brownies with Cannabis Oil

Ingredients:

  • 200g dark chocolate, broken into pieces
  • 250g unsalted butter
  • 300g caster sugar
  • 3 large eggs
  • 100g plain flour
  • 50g cocoa powder
  • 2 tablespoons cannabis oil (adjust based on desired potency)
  • 1 teaspoon baking powder
  • 100g chocolate chips (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 180°C (160°C fan).
  • Grease and line a 20x30cm rectangular baking tin.

2. Melt Chocolate and Butter:

  • In a heatproof bowl, melt the dark chocolate and butter over a pot of simmering water, stirring until smooth. Set aside to cool slightly.

3. Combine Sugar, Eggs, and Cannabis Oil:

  • In a separate bowl, whisk together the caster sugar, cannabis oil, and eggs until pale and creamy.

4. Add Melted Chocolate:

  • Gradually add the melted chocolate mixture to the sugar and egg mixture, mixing well until fully combined.

5. Add Dry Ingredients:

  • Sift in the flour, cocoa powder, and baking powder. Gently fold the dry ingredients into the chocolate mixture.

6. Add Chocolate Chips (Optional):

  • If using, stir in the chocolate chips.

7. Bake the Brownies:

  • Pour the batter into the prepared tin and level the top with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until the top is set and a skewer inserted into the center comes out with a few moist crumbs.

8. Cool and Serve:

  • Allow the brownies to cool completely in the tin before cutting them into squares.
