Ingredients
– 200g dark chocolate, broken into pieces
– 250g unsalted butter
– 300g caster sugar
– 3 large eggs
– 100g plain flour
– 50g cocoa powder
– 2 tablespoons cannabis oil
– 1 teaspoon baking powder
– 100g chocolate chips (optional)
Instructions
1. Preheat your oven to 180°C (160°C fan).
2. Grease and line a 20x30cm (8×12 inch) rectangular baking tin.
3. In a heatproof bowl, melt 200g of dark chocolate and 250g of unsalted butter over a pot of simmering water. Stir until smooth and set aside to cool slightly.
4. In a separate bowl, whisk together 300g of caster sugar, 2 tablespoons cannabis oil and 3 large eggs until pale and creamy.
5. Gradually add the melted chocolate mixture to the sugar and eggs, mixing well.
6. Sift in 100g of plain flour, 50g of cocoa powder, and 1 teaspoon of baking powder. Fold gently into the mixture.
7. If using, stir in 100g of chocolate chips.
8. Pour the batter into the prepared tin and level the top. Bake for 25-30 minutes, or until the top is set and a skewer inserted into the centre comes out with a few moist crumbs.
9. Allow the brownies to cool completely in the tin before cutting into squares.
