Classic Pound Cake with Cannabis Oil and Vanilla Frosting

Ingredients:

For the Pound Cake:

  • 250g unsalted butter, softened
  • 300g granulated sugar
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons cannabis oil (adjust based on desired potency)

  • 2-3 tablespoons milk

Instructions:

Preparing the Pound Cake:

1. Preheat the Oven:

  • Preheat your oven to 175°C.
  • Grease and flour a 23cm loaf pan or a 23cm bundt pan.

2. Cream Butter and Sugar:

  • In a large mixing bowl, cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 5 minutes.

3. Add Eggs and Extracts:

  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract, cannabis oil, and almond extract (if using).

4. Combine Dry Ingredients:

  • In a separate bowl, whisk together the flour, baking powder, and salt.

5. Mix the Batter:

  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.

6. Bake:

  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake in the preheated oven for 60-70 minutes, or until a skewer inserted into the center of the cake comes out clean.

7. Cool the Cake:

  • Allow the cake to cool in the pan for about 15 minutes, then turn it out onto a wire rack to cool completely.

Preparing the Vanilla Frosting:

1. Beat the Butter:

  • In a medium bowl, beat the softened butter on medium speed until creamy.

2. Add Powdered Sugar:

  • Gradually add the powdered sugar, one cup at a time, beating well after each addition until the frosting is smooth and fluffy.

3. Add Vanilla and Milk:

  • Beat in the vanilla extract.
  • Add milk one tablespoon at a time until the frosting reaches your desired consistency.

Frosting the Cake:

1. Apply Frosting:

  • Once the pound cake is completely cool, place it on a serving plate.
  • Spread the vanilla frosting evenly over the top and sides of the cake.
  • For a decorative touch, you can use a piping bag to create swirls or designs with the frosting.

Serving:
