Mexican Corn Salad with Cannabis Oil

Ingredients:

  • 2 cans (340g each) salt-free sweetcorn, drained
  • 1 red onion, finely chopped
  • 2 large tomatoes, deseeded and finely diced
  • 15g fresh coriander, roughly chopped
  • Juice of 2 limes
  • 60ml extra virgin olive oil
  • 1-2 teaspoons cannabis oil (adjust based on desired potency)
  • 10ml clear honey
  • Salt and freshly ground black pepper, to taste

Instructions:

1. Combine the Salad Ingredients:

  • In a large bowl, mix the sweetcorn, red onion, tomatoes, and coriander.

2. Prepare the Dressing:

  • In a small bowl, whisk together the lime juice, olive oil, cannabis oil, and honey until well combined.

3. Season and Mix:

  • Season the dressing with salt and black pepper to taste, then pour it over the corn salad.

4. Toss and Serve:

  • Toss the salad to coat all ingredients with the dressing evenly, then serve immediately.
